    Peel, pit, and dice the peaches. In a small saucepan, combine diced peaches, bourbon, and brown sugar. Cook over medium heat, stirring occasionally, until peaches are softened and liquid has thickened slightly, about 8-10 minutes. Remove from heat and let cool completely.

    While peaches cool, grate the smoked Gouda cheese. In a medium bowl, combine the softened cream cheese and grated Gouda. Stir in fresh thyme leaves. Once the peach mixture is cool, gently fold it into the cheese mixture.
