Instructions

  1. 1

In a large mixing bowl, combine the active sourdough starter and warm water. Stir to dissolve.

    ~2 min
  2. 2

Add the bread flour, salt, and honey to the bowl. Mix until a shaggy dough forms.

    ~3 min
  3. 3

Turn the dough out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook.

    ~10 min
  4. 4

Place the dough in a lightly oiled bowl, cover, and let it rest for 1 hour for the first rise.

    ~60 min
  5. 5

Gently deflate the dough and shape it into a round or oval Pide. Place it on a baking tray lined with parchment paper.

    ~5 min
  6. 6

Cover the Pide loosely and let it proof for another 1-2 hours, or until doubled in size.

    ~90 min
  7. 7

Preheat your oven to 450°F (230°C).

    ~15 min
  8. 8

If using, brush the top of the Pide with pomegranate molasses diluted with a little water. Sprinkle generously with toasted sesame seeds.

    ~2 min
  9. 9

Bake for 15-20 minutes, or until the Pide is golden brown and sounds hollow when tapped on the bottom.

    ~20 min
  10. 10

Remove from the oven and let it cool on a wire rack before slicing.

    ~10 min
