Prepare the bitter melon: Slice the bitter melon in half lengthwise. Scoop out the seeds and pith. Slice thinly into half-moons. Place in a bowl, sprinkle with 0.5 teaspoon salt, and let sit for 15 minutes to draw out bitterness. Rinse thoroughly under cold water and squeeze out excess moisture. Pat dry with paper towels.

Prepare the tofu: Cut the firm tofu into small cubes, approximately 0.5 inch. Pat them very dry with paper towels. Toss the tofu cubes with smoked paprika and cornstarch until evenly coated.

Make the sauce: Finely mince the garlic and ginger. Crumble the dried red chilies. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, and sugar.
