Instructions
- 1
Cut the halloumi cheese into 1-inch cubes. Peel and dice the ripe mangoes into 1-inch cubes, similar in size to the halloumi.
~10 min - 2
In a mixing bowl, gently toss the halloumi cubes and mango cubes together. Thread the halloumi and mango cubes alternately onto skewers, leaving a small space between each piece.
~15 min - 3
Prepare the coconut glaze: In a small saucepan over low heat, combine coconut milk, lime juice, honey, grated fresh ginger, ground turmeric, and red pepper flakes. Whisk until honey is dissolved and the glaze is slightly thickened, about 5 minutes.
~5 min - 4
Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking.
~5 min - 5
Grill the skewers for 3-4 minutes per side, or until the halloumi is golden brown and slightly softened, and the mango has slight char marks. During the last 2 minutes of grilling, brush the skewers generously with the coconut glaze.
~8 min - 6
Remove skewers from the grill. Garnish with freshly chopped mint leaves before serving.
~2 min
Tips
- Soaking wooden skewers in water for at least 30 minutes before use will prevent them from burning on the grill.
- Serve these skewers immediately for the best texture and flavor. They can be enjoyed on their own or with a light side salad.
