Instructions
- 1
Preheat your oven to 350°F (175°C) and line a baking tray with parchment paper.
- 2
In a mixing bowl, combine the chopped pistachios, honey, cinnamon, cardamom, and salt. If using, stir in the orange blossom water. Mix well to form a thick paste.
~5 min - 3
Carefully unroll the filo dough sheets. Keep them covered with a damp kitchen towel to prevent them from drying out. Take one sheet at a time and brush it generously with melted butter.
~5 min - 4
Place another buttered filo sheet on top of the first. Repeat this process until you have a stack of 3 buttered filo sheets.
~3 min - 5
Cut the stacked filo sheets into 4 equal rectangles.
~2 min - 6
Place about 1 tablespoon of the pistachio filling at one end of each rectangle. Fold the sides of the filo dough inwards to enclose the filling, then roll it up like a small parcel or cigar.
~5 min - 7
Place the filled pastries seam-side down on the prepared baking tray. Brush the tops generously with the remaining melted butter.
~3 min - 8
Bake for 15-20 minutes, or until the pastries are golden brown and crisp.
~20 min - 9
Allow to cool slightly before serving. They are best enjoyed warm.
Tips
- If filo dough becomes difficult to work with, keep it covered with a damp cloth. You can also slightly moisten your fingers with water to handle it more easily.
- For an extra layer of flavor, you can lightly toast the pistachios before chopping them. Serve these pastries with a drizzle of extra honey or a dollop of thick yogurt.
