Instructions

  1. 1

Rinse the preserved lemon thoroughly under cold water. Remove the pulp and finely chop the rind. If the rind is still too salty, blanch it in boiling water for 30 seconds, then drain and pat dry.

    ~5 min
  2. 2

In a food processor, combine the feta cheese, cream cheese, Greek yogurt, and 1 tablespoon of the za'atar spice. Process until smooth and creamy.

    ~3 min
  3. 3

With the food processor running, slowly drizzle in the olive oil until fully incorporated and the mixture is airy.

    ~2 min
  4. 4

Transfer the whipped feta to a serving bowl. Create a slight well in the center.

    ~1 min
  5. 5

In a very small bowl, combine the chopped preserved lemon rind, remaining 1 tablespoon of za'atar, and fresh lemon juice. Mix well.

    ~1 min
  6. 6

Finely mince the preserved lemon rind mixture further using a knife or pass it through a fine-mesh sieve to create a 'dust'. Alternatively, you can very carefully pulse it in the food processor for a few seconds, but be careful not to over-process into a paste.

    ~3 min
  7. 7

Sprinkle the preserved lemon and za'atar dust generously over the whipped feta. Season with a pinch of salt and black pepper.

    ~1 min
  8. 8

Serve immediately with warm pita bread, crusty bread, or fresh vegetable sticks.

Tips

  • For a smoother preserved lemon dust, use a microplane to finely grate the rind after rinsing. Ensure the rind is completely dry before grating.
  • This whipped feta is best served fresh. If you have leftovers, store in an airtight container in the refrigerator for up to 2 days. The preserved lemon dust may lose some of its potency.
