    Cook bacon in a frying pan until crispy. Remove bacon and drain on paper towels. Reserve about 1 teaspoon of bacon grease in the pan.

    Butter one side of each slice of sourdough bread.

    Place one slice of bread, butter-side down, into the frying pan with the reserved bacon grease. Top with half of the smoked Gouda cheese.
