Push the rolled egg to one side of the pan, re-oil, and pour another thin layer of egg mixture, lifting the rolled egg to let the new mixture flow underneath. Continue this process until all egg mixture is used, creating a multi-layered omelet. Let cool slightly, then slice into bite-sized pieces.
