Instructions

  1. 1

Press the tofu to remove excess water, then cut into 1-inch cubes. In a bowl, toss the tofu with soy sauce, sesame oil, and smoked paprika. Let it marinate for at least 10 minutes.

    ~15 min
  2. 2

While the tofu marinates, wash and roughly chop the bitter greens. Mince the garlic and ginger.

    ~5 min
  3. 3

Heat 1 tablespoon of vegetable oil in a frying pan over medium-high heat. Add the marinated tofu and cook until golden brown and slightly crispy on all sides, about 8-10 minutes. Remove tofu from the pan and set aside.

    ~10 min
  4. 4

Add the remaining 1 tablespoon of vegetable oil to the same pan. Add the minced garlic and ginger and sauté until fragrant, about 1 minute. If using, add chili flakes.

    ~1 min
  5. 5

Add the chopped bitter greens to the pan. Stir-fry until wilted, about 3-5 minutes.

    ~5 min
  6. 6

Return the cooked tofu to the pan with the greens. Toss to combine and heat through for another 1-2 minutes.

    ~2 min

Tips

  • For a deeper smoky flavor, consider using smoked tofu if available. Alternatively, you can add a tiny pinch of liquid smoke to the tofu marinade.
  • Serve immediately over steamed rice or noodles for a complete meal. The bitterness of the greens can be mellowed slightly by adding a touch of honey or mirin to the sauce if desired.
